Ask any Costco shopper about their favorite foods from the wholesale chain, and chicken bake is bound to come up. People are obsessed. Unfortunately, not everyone is a member (myself included) which means they’re missing out. Luckily, our copycat recipe is just as good, maybe even better.
If you’ve never had a chicken bake, it’s essentially Stromboli filled with mozzarella, chicken, bacon, Caesar dressing, and green onion. Side note: The green onion was a little perplexing to me, but I assure you it works. Don’t try to substitute something more Italian, like parsley or basil.
This recipe isn’t difficult by any means, but it does take some time — more time, at least, than reheating the frozen one that you’ll find at Costco. First, you need to cook chicken. We seasoned boneless skinless chicken breasts with Italian seasoning and cooked them whole in a skillet before chopping. To make things easier, just use shredded rotisserie chicken.
Next, roll out pizza dough just like you would when making a regular pie, nice and thin. Spread the dressing right on top and load it with all the fillings. Then roll it up! It’ll be messy and awkward, but just keep rolling. It’s going to be great. Brush the top with egg wash, sprinkle with more cheese (just because), and get ready for the monstrous chicken bake you’re about to devour. It could probably feed up to three people, but let’s be real: It’s so good you’ll eat it all yourself.
